La grappa aromatizzata ai frutti di Sorbo Montano, avrà un colore rosato e un sapore dolce e intenso, sarà particolarmente indicata per accompagnare i dessert, in particolare quelli alla frutta e biscottati.
Ingredienti necessari per fare la grappa al sorbo montano
• 20-30 frutti maturi di Sorbo montano (vale a dire di una colorazione rosso intensa)
• 5 cucchiai di zucchero
• 1 lt di Grappa
Preparazione della grappa al sorbo montano
*In montagna, quando è già caduta la prima neve, si raccoglieranno un paio di manciate di questi frutti maturi.
Sciogliere in un litro di grappa 5 cucchiai di zucchero. Aggiungere, una volta lavati e tagliati a metà, un paio di manciate di frutti di sorbo maturi. Il tutto dovrà macerare esposto al sole fino a quando le bacche non avranno ceduto il loro colore (almeno 1 mese), avendo l’accortezza di scuotere il contenitore di tanto in tanto.
Trascorso il tempo della macerazione andrà filtrata e si lascerà stagionare per almeno 2-3 mesi prima di poterla gustare.
Curiosità sulla grappa al sorbo montano
Il Sorbus aria, noto anche come farinaccio o sorbo montano, produce un frutto farinoso, privo di sapore, che ricorda vagamente quello del biancospino. Questo albero ha le sue origini nell’Europa centro-meridionale, e il nome del genere è strettamente legato al termine utilizzato dai Romani per identificare questa pianta.
In passato, i frutti venivano addirittura consumati come parte della dieta umana. Durante periodi di carestia, a causa della loro polpa farinosa, venivano macinati e mescolati con la farina per preparare il pane. Sebbene oggi questa pratica sia caduta in disuso, i frutti trovano ancora impiego in ricette regionali tradizionali, nella produzione di marmellate e gelatine.
Da questi stessi frutti veniva distillata un’acquavite rustica, ottenuta facendo fermentare i frutti schiacciati nell’acqua, dando luogo a un liquore con un leggero retrogusto di pera. Questo stesso sapore viene ritrovato in una grappa aromatizzata con i frutti di questo sorbo, che può essere più accuratamente descritta come montana.
